Join us in a relaxed setting for a pint and a chat before all the CBAC fanfare begins. The Brew Culture crew and White Labs team will be stationed at Gahan House, just steps away from the registration booth and convention centre on Thursday June 1st from 4pm to 6pm. We’ll be sharing pints of Thiol City IPA, a collaboration brew featuring WLP077 Tropicale Yeast Blend, food and yeasty conversations.
Our guest of honor for the evening is Chris White, PH.D - President, Founder and CEO of White Labs Inc. A pioneer in our industry, he is looking forward to getting some face time with Canadian brewers and propagating some good conversations.

In this session we will learn about yeast hybrids - what they are, and how to best use them to your brewery’s advantage. There will be an introductory explanation on what yeast hybrids are, and what alternative methods are currently offered in commercial brewing yeast strains. Then, we will hear from brewers who have used various hybrid strains to achieve their goals in fermentation, and how they have impacted the production process as well as beer quality.

The goal of this session is to give brewers the foundational knowledge needed to intelligently source fruit, both for safety and for great beer. The session will explain the times of year the fruit industry plans, purchases, and ships products. Brewers will learn how the processing industry contracts, produces, harvests, and processes raw materials. They will also understand what attributes are important for considering a safe and wholesome product to introduce into their systems.
